Cucumber is the kind of refreshing food that I don’t have to feel bad about craving during my pregnancy. As the weather gets hot, I’ve been envisioning it in every and any form.

A recent gazpacho from Calyer inspired me to make some myself.

I found this easy recipe.

It wasn’t a hit with the whole family – Jim found it a bit overwhelming in taste (there’s lots of garlic) but I really loved this and it’s just right for summer time.

I omitted the jalapeños so I could share with Van, but I’m sure a spicy kick would be a great addition.

It was hot, I wanted gazpacho, Ina Garten gave me an easy peasy recipe that is simple and delicious.

Great for a healthy last minute lunch. The recipe can be modified and expanded on to fit your fancy, but the original is good too.

Yay for summer weather and cold soup goodness!

I’m still exploring the crock pot and with the seasonal chill in the air I decided on a Salsa Chicken and Black Bean soup. It’s a reader favorite from the A Year of Slow Cooking site and understandably so.

It’s mild though flavorful and could please most palettes, though personally I was glad to have some chipotle Tabasco on hand to spice things up.

I made the mistake of skipping the step of rinsing my canned beans. It meant a “soupier” soup rather than the slightly thickened one I was expecting. Still a great easy recipe that will please a wide variety of people raised on Tex Mex (Americans).

Delicious! Potato Leek soup is a personal favorite but this is my first time making it myself.

I trusted Alton Brown with the recipe which can’t claim to be low fat but is amazingly yummy both hot and chilled.

Best left over lunch ever!

Recipes »Creamy Gazpacho

I was craving gazpacho in the wrong season but I decided to make some myself anyways.

This Creamy Gazpacho recipe is labor intensive if you’re lazy in the kitchen like me. But it is lots of squishing stuff, which is fun.

I always assumed creamier gazpachos were named so because they were made with cream but the lighter color and thicker tecture actually comes from bread.

We scarfed our bowls before I thought to take a photo but I did capture part if the prep work.

While I couldn’t replicate La Buenas this was pretty excellent. Next time I might make a huge batch to keep in the fridge for healthy snacking.

La Buena Gazpacho from chef Alexandra Raij is so crazy delicious, I wish I had had gallons to enjoy over the Summer.

Perhaps a date night to one of her restaurants, Txikito and El Quinto Pino should be on our agenda…

Jim and I were worried about blandness based on the simplicity of the ingredient list for this Brazilian Fish Stew, or Moqueca but they belie incredible flavor and one of the yummiest meals we’ve been surprised by in a while.

We used ingredients we already had on hand so we omitted the rice and cilantro.

This is one of those meals that impresses but actually takes very little effort. Another Simply Recipes gem.

Real Simple usually offers easy recipes that pack more punch than their ease and limited ingredients would suggest, and this thick, potato and pancetta enhanced belly warming Scallop Corn Chowder is no different.

I’ll be honest, my cooking and baking lately has resulted in the unexpected. Banana bread turned into a thicker almost pudding like creation recently, and even chocolate chip cookies from a back of the box recipe turned out entirely edible but undeniably strange (baking soda vs baking powder and brown sugar versus natural sugar does make a difference, it seems), and this Simply Recipes White Chili proved to be no different.

As you can see from my mediocre photograph, it’s not exactly white, which could be  in part because of my inclusion of a generous amount of chili powder and red kidney beans, and it’s far more on the soup side of things than chili. This is my fault for opting to use what I had on hand, namely canned beans (both kidney and white) and guessing that two cans equals a pound of dried. I think I was wrong, and yet the meal was still absolutely delicious and fulfilling.

Seems that any recipe with a good basis can be messed with and still turn out noteworthy and Simply Recipes always has some good recipes to play around with.

As some commenters mention on this Simply Recipes Hot and Sour Soup thread, it’s definitely not one of the most attractive soups out there, but when done right (not that gloppy bad take out stuff) I thrive on the dish. I could live off the Kikkoman mix that I’ve enjoyed since childhood (almost literally – I bought a case from Amazon as it became harder to find in local stores) but this more time consuming, fresh ingredient version, is definitely worth the extra preparation. It’s light, which might be surprising and we added some chicken to make it a heartier meal. We also substituted fresh mushrooms and were unable to add the more unique ingredients like lily buds. But it’s a recipe open to interpretation and your own flare.

Hooray! It’s the time of year for chowder consumption (at least it’s meant to be –  hello, global warming). This Eating Well Salmon Chowder is nice and thick without resorting to those unhealthy thick creams or milks. Instead, one uses potato flakes, which leaves one in the happy situation of having a box of Idaho Spuds in the house – a purchase one otherwise might feel embarrassed about, despite their deliciousness and ease of preparation.

Plus: my favorite herb (tarragon) gets a starring roll, as does as kicky Dijon and chives.
