I’m almost sorry to admit it with so many friends (lots of pregnant ones at that!) suffering through crazy NYC heat waves, but the summer here has been downright pleasant. Still, even if balmy, it feels right to make hot weather food in the summer.

This Glazed Salmon with Cucumber Mint Slaw certainly fits the bill. It’s refreshing, tangy and slightly sweet and a great new way to make salmon – which we eat a lot of these days as we are surrounded by the best local fish and seafood.

Seafood in Seattle is great. I’ve never enjoyed so many simply prepared fish dishes before. When something’s fresh in the market, I just look up an easy prep and enjoy.

One such quick meal is Martha’s Citrus Soy Glazed Black Cod. Lime gives the glaze a unique and delicious tang.

The Pike Place Market, arguably Seattle’s most famous destination, is too vast with too much to offer to write one entry based on one visit, so I will just start with the most life changing.

It’s called Salmon Candy and you can find it at Jack’s Fish Spot. Located across from the one where they toss the fish featured on every travel channel show out there, it’s a friendly place that has fresh fish, a bar around back where you can chow on oysters, fish and chips, and clam chowder (to name a few), and bins of smoked fish.

Salmon Candy was recommended by the man on duty and he certainly didn’t steer me wrong. The best smoked salmon I’ve ever had. So good that I opted to send a pound to my mother in lieu of flowers for mother’s day.

I’m glad that Giada is more than a soothing voice that could drift you to sleep on a hammock. Any time I’ve tried out one of her recipes, they exceed my expectations.This Mediterranean Halibut Sandwich is no exception.

I’ve made similar flakes fish sandwiches with canned tuna (haven’t we all?) but a freshly roasted fillet – in my case I substituted lemon sole- makes for an entirely different and elevated dish. The filling with sun dried tomatoes capers zest and parsley is mellower than it’s parts but still flavorful. I added a slice of fresh mozzarella.

I always assumed roasting a whole fish would be some sort of ordeal outside my limited skills as a cook, but this Roasted Branzino with Caper Butter was super easy and beyond yummy.

With so few ingredients I was worried it might end up bland, but I can’t recommend this preparation enough!

I know that slathering mayonnaise on food doesn’t appeal to everyone and I admit this turned out looking a little more like a burnt marshmallow than I expected, but I promise this simple three ingredient Scallion Crusted Arctic Char is delicious.

I found the recipe on epicurious after seeing an Iron Chef char battle and wanting to prepare the salmon and trout like fish.

Flounder is not commonly something to get worked up about, but I’ve really been raving and pushing this simple to make Flounder with Cilantro-Curry Topping and Toasted Coconut recipe on everyone I know.

It’s incredibly low calorie and the kind of meal that proves that eating right can be rewarding. I’d serve with rice next time to sop up the flavorful but light sauce.
